CORN BEEF AND CABBAGE......NOT JUST FOR A HOLIDAY!

Another beautiful spring day.........blue, blue sky and a freshly cut back yard.  Bob just loves that mower and today.........he was able to mow and bbq at the same time!  He had chicken on the bbq and everytime he came close to the bbq, he would jump off, adjust the chicken and jump back on. He never missed a beat! Clever man.

We'll discuss barbecuing another time........lots of summer for that. One of my readers, Kwint, made a special request for corn beef and cabbage.  "Why should we only eat corn beef and cabbage on a holiday?" I guess I didn't have an answer for that.  Indeed we have enjoyed it at odd times of the year. We have even cooked corn beef and cabbage on the beach!  Remember that? for those of you that were there.........

First buy a nice cut of corn beef that comes packaged with pickling spices.  It is so simple........follow the directions on the package.  Bring it all to a boil and simmer for several hours, skimming the foam off as you go along. The last hour before serving.........add carrots, onion, small new potatoes in the skin and the cabbage.  Cut your head of cabbage into good size wedges and just throw them in. Now some people don't like to cook the cabbage with the corn beef.........that is ridiculous........its the flavor from the meat that makes the vegys taste sooooo good.  BUT if you don't eat it all, which I am sure you won't........separate the meat and store in a container by itself....don't ever recook cabbage...........bad deal.
