AMERICAN IDOL AND AMARETTO COOKIES

Today we are under a Severe Weather Watch.......isn't that exciting!!  So thought I better get this posted before the rain, hail and big wind get started.  We did work in the yard again today.  The Electric Co people were here trimming our trees away from the power lines..........we have sooooooo many trees.......I just love it. They picked everything up and even cut the bigger pieces of limbs into small pieces for us to use in our fire pit.

Its been a week since we have had Mexican food.  Having been married for 31 years.......our tastes are exactly alike........both hungry for something south of the border. I fixed tostados.  I'm sure you all know how but will just run through it. Brown hamburger with LOTS of chili powder. Fry whole corn tortillas til crisp. Make some salsa.......or use some from the store......just not as good as homemade. Grate some cheese.   Place your crispy tortilla on your plate, top with refried beans, hamburger meat, grated cheese, salsa or guacamole and enjoy.

So, haven't had anything sweet for a bit.........decided on Amaretto Cookies........my favorite cookie. Put 1 cup soft butter in your mixer......add 1 cup brown sugar and 1/2 white sugar and beat well........then add 2 eggs and 1 Tblsp of Amaretto (if you don't have it.....just leave it out) 2 tsp of almond extract. Beat all of this up and add 2 1/2 cups flour, 1 tsp. baking soda, 1 tsp. baking powder and 1/2 tsp salt.  NOW........dump in anything you care to.......choc chips, dried cranberries or cherries, or almonds, or coconut........anything that you have around.........Drop and bake at 350 for 10-12 min........I will love these tonight while watching American Idol!  (If we don't loose our electricity!?!)
