Have been trying to think of special Mexican dishes to celebrate Cinco de Mayo tomorrow. There are so many that I love so decided to just give a few hints on some. The first dish I thought of is tamales.......but they do involve two people and take most of an afternoon to make. I make several dozen at once and freeze them.......its so easy to take one out of the freezer and pop into the microwave for a quick snack. I do all of the work.........making the meat sauce, making the masa, softening the corn husks, spreading the masa in the cornhusk, filling with meat sauce, folding and rolling and Bob ties the strings around the cornhusk and then cuts the string! Of course he is giving me advice through the whole process! I hear him tell friends that "we made tamales"! I just smile.
Guacamole is a must on Cinco de Mayo........involves tomatoes, chopped onion, cilantro, serrano, lime and salt........2 avocados. A crime that is committed is pureeing the avocados into baby food. Smash them with a fork and leave them a little chunky. Always add the salt........ brings out all the flavor. Make your own chips..........just cut your fresh corn tortillas into four pieces.......fry quickly in a couple inches or hot oil and remove to paper towel, sprinkle with a little salt.
Another favorite.......Chilaquiles Verde.........This is a dish that the Mexican people eat for breakfast or after a long night of drinking..........Just buy a cooked chicken at the store and shred the meat. The easy way is to buy a large can of Old El Paso green enchilada sauce (I could just drink it out of the can!) Saute some chopped onion and garlic in a little oil in a frying pan. Add the green sauce, some fresh cilantro, and the shredded chicken. Warm this all up and stir in a bunch of tortilla chips. Top with shredded cheese, put a lid on to melt the cheese a bit and that is it! You can make this with red sauce also.
An interesting fact...........the Mexicans really don't celebrate Cinco de Mayo........its celebrated more in the states than in Mexico! Oh, and remember the Corona or Pacifico!
